Vietnamese Chicken Salad
A Vietnamese-inspired take on chicken salad has shredded cabbage, Asian flavors of lime juice, sesame oil, and fish sauce, and shredded boneless chicken, all topped with chopped peanuts. It makes a nice lunch or light supper.
